Amazingly Light PB Bars with Nutella Swirl
Okay, so this weekend instead of sleeping after my night shift, I went decor shopping for our apartment, grocery shopping at Wegmans, worked on some research and made these AMAZING peanut butter bars. Seriously, they are soooo good! They are light, not too sweet and the nutella on top is a perfect touch so it's not just all peanut butter that you taste. I made them for a co-resident's bday, but I am saving a few home for me and Mike :).

PB Bars with Nutella Swirl
Ingredients
* serves 16 bars
- 1 cup unsweetened applesauce
- 1 cup creamy peanut butter
- 6 tablespoons honey
- 1 teaspoon vanilla extract
- 2 large eggs (flax seed substitute work great too! the bars come out a little denser)
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1 cup gluten free flour, oat flour, spelt flour
- 1/2 cup nutella for swirl
Directions
- turn oven on to 350 degrees fahrenheit
- mix wet ingredients first- PB, applesauce, honey, eggs, vanilla,
- mix in dry ingredients- flour, baking soda, salt, cinnamon
- spray pan with oil or I used coconut oil with a paper towel to smear it on all sides of the pan.
- spoon batter into 9 in by 9 in pan. the batter was a little shy of an inch in depth was smoothed out.
- heat nutella in microwave for 20 seconds. dollop on top and swirl.
- bake for 23-25 minutes
- I topped mine with a little nutella, granola and cocoa nibs
our dinning room is almost done!
