Easy Guacamole

Did you know avocados were called alligator pears?!  When I thought about it, it makes sense!

Avocados are full of fiber, healthy unsaturated fats, and nutrients like Vitamin K, Folate, and B vitamins.  This makes them great for a snack (one of may favorite things to do haha), football Sundays to get your family eating something green and good for them, or with some toast for breakfast.

GUACAMOLE RECIPE

Ingredients

  1.  2 soft avocado 
  2.  4-5 grape tomatoes
  3.  1/4 cup of diced onion
  4.  1/2 green pepper *optional but makes your gauc a little sweeter
  5.  1 clove of garlic 
  6.  1 tsp of salt
  7.  2 squirts of sriracha *optional
  8.  chili powder *optional

Equipment

       Food processor or a really good fork and arm strength to smash those avocados 

Directions
  1. Cut avocado in half.  Leave in skin and slice into cubes then spoon out cubes. Picture below.
  2. Dice onion and garlic.
  3. I throw everything in the blender including the grape tomatoes whole (I just think it's faster).
  4. Blenderize. Then season with salt, chili powder, sriracha and pulse a few more times.  
  5. Taste and add more seasoning if needed. 
  6. Store with saran wrap over the top (press down to get rid of all the air) to keep your guac looking fresh and green.

Also, I got these chips from Sam's club and I really like them.  I am not saying chips are healthy.  But, we need to be honest with ourselves.  I personally love chips, especially since I do not eat much gluten.  So, I at least try to choose a healthier option.  As my little sister always says, BTN or better than nothing.  Life is hard so making little, better than nothing, changes gets us in the direction to eat well to live well.
