Carrot Ginger Energy Bites

Carrots are my favorite vegetable.  And, I love sneaking vegetables into recipes that usually don't include them.  Just be prepared these are not your usual chocolaty energy bites.  But, if you want a change, I personally love these!

Carrot Ginger Energy Bites

Ingredients
  • 1 cup pitted Medjool Dates
  • 2 carrots roughly chopped
  • 1/3 cup almond butter
  • 1/3 cup rolled oats
  • 1 teaspoon of chia seeds
  • 1 teaspoon cinnamon
  • two shakes of ground ginger
  • one shake of teaspoon nutmeg
  • one shake of turmeric (I opened the wrong side of the shaker, so my energy bites were super turmericy. oops)
Directions
  1. Put all ingredients into a blender and pulse until equally mixed
  2. Roll into golf ball size bites
  3. Put in refrigerator to set  

I did some yoga this morning to stretch and then had these for breakfast!  I also love getting vegetables in at breakfast time.  Winning :)
