Carrot Ginger Energy Bites
Carrots are my favorite vegetable. And, I love sneaking vegetables into recipes that usually don't include them. Just be prepared these are not your usual chocolaty energy bites. But, if you want a change, I personally love these!
Carrot Ginger Energy Bites
Ingredients
- 1 cup pitted Medjool Dates
- 2 carrots roughly chopped
- 1/3 cup almond butter
- 1/3 cup rolled oats
- 1 teaspoon of chia seeds
- 1 teaspoon cinnamon
- two shakes of ground ginger
- one shake of teaspoon nutmeg
- one shake of turmeric (I opened the wrong side of the shaker, so my energy bites were super turmericy. oops)
Directions
- Put all ingredients into a blender and pulse until equally mixed
- Roll into golf ball size bites
- Put in refrigerator to set
I did some yoga this morning to stretch and then had these for breakfast! I also love getting vegetables in at breakfast time. Winning :) |
