Meat Sauce with Chorizo
Mike and I knew we wanted to cook for everyone one night of our vacation. When I got to Madrid and saw our Air B&B's kitchen, I knew I wanted to cook there! We were traveling with about 12-13 people, so we did not want to make anything too challenging. We also wanted to make something we knew would turn out good. So, we decided (of course) to make meat sauce and pasta. But, I wanted to give it a Spain flare, so we decided to use Chorizo sausage instead of Italian sausage. And, it turned out great!! We definitely made too much pasta... like 8 lbs because we messed up converting from kg to lbs. I swear we are smart and will be good doctors haha. Anyways, here is the recipe! I am going to downsize it for 5-6 people :). But, just message me if you want the recipe for 15 people.

Meat Sauce with Chorizo
Ingredients
* makes for 6 people
- 1.5 lbs of lean ground beef
- 1 package of 12 chorizo sausage
- 1 can of 28 oz can of Tuttorosso Crushed Tomatoes with Basil
- 2 cans of 14.5 oz of Hunt's Diced Tomatoes
- 3-4 cloves of garlic diced
- 1 medium white onion diced
- 3 tbsp of olive oil
- 2 tbsp dried parsley
- 4 tbsp of fresh basil chopped and 1 tbsp for garnish
- 1 tbsp of dried oregano
- Parmesan cheese for people to add (dairy free cheese can be substituted)
- 2 lbs of pasta (gluten free pasta can be substituted)
Directions
- Heat skillet to high. When hot, place Chorizo in pan and cover (I cover it because the oil splatters and it makes a mess ha). Every 4-5 minutes turn Chorizo to brown each side. Continue until all sides are brown and well cooked.
- Heat another skillet to medium and brown ground beef. Should take about 10 minutes.
- Heat olive oil in sauce pot and saute garlic and onions.
- Add parley, basil and oregano and let cook for another minute.
- Add canned tomatoes.
- Transfer browned ground beef and Chorizo to sauce.
- Lower flame, cover pot and let simmer for 50 minutes. The longer you let it simmer the thicker and tastier your sauce will be.
- Make pasta (about 2 lbs, NOT 8 lbs haha) and enjoy!
- Garnish with basil and cheese.
We kept the pasta separate because we made so much. |
