Easy Stromboli for Game Day
This weekend I had a family dinner at Mom and Dad's to celebrate my cousins engagement (CONGRATULATIONS!) and then people over Sunday for football. My mom wanted me to make an appetizer and side dish. I am all about maximizing my time and being efficient. So, I thought let me make an appetizer that can be used for both days.... and Mike's lunch Monday. Strombolis are perfect! And, soooo easy to make, especially if you use pre-made dough, which I recommend. I made one of the doughs from scratch and I did not love it. I think I needed to knead it more. One, day I will get myself a real mixer with a dough hook!
But, really this recipe is so easy and you can fill it with whatever you like. I did one with broccoli and ricotta, another with pepperoni, salami, and ham and another with just pepperoni. They literally take 5 minutes to put together and 20 minutes to bake. If you are having people over for Superbowl, this is a super easy recipe to win people over... while the Eagles are WINNING of course :). I am not a huge football fan, but my family loves the Eagles and my boyfriend watches football every weekend, so it has definitely grown on me.

Easy Stromboli for Game Day
Deli Meat Stromboli
Ingredients- 1/2 of a 6 oz package of pepperoni of your choice
- 1 package 4 oz of salami (I bought genoa, but buy whatever you like)
- 1/4 of a 9 oz package of ham (I bought hillshire farm)
- 4 oz of shredded mozzarella cheese
- 1 jar of pizza sauce of your choosing
Broccoli Cheese
Ingredients- 2 cups of chopped broccoli
- 2 cloves of garlic minced
- 1 tbsp of olive oil
- 4 oz of shredded mozzarella cheese
- 8 oz of ricotta cheese
- salt and pepper to taste
Dough and Topping
Ingredients
- Any pizza dough. I used Papa Sal's. Mike doesn't like the Pillsbury ones, but they roll out so easy that I sometimes use them anyways.
- 1 clove of garlic minced
- 2 tbsp of chopped parsley
- 1 1/2 tsp of butter
- 1 tsp of olive oil
Directions
- Pre- heat oven to 425 degrees F
- Roll out dough and place on greased parchment paper pan.
- For Broccoli cheese calzone. Heat pan to high and add 1 tsp of olive oil. Add garlic and saute. When garlic is golden add broccoli and saute until it is soft on the inside and a little crispy on the outside. Finish with a little salt and pepper to taste. Fill dough with broccoli mix. Add 5-6 dollops of ricotta and then cover all of it with a layer of mozzarella.
- For the Pepperoni Calzone. Spread sauce on the dough. Then place one layer of pepperoni, then a layer of cheese, another layer of ham and then cheese, and repeat again with a layer of salami.
- Fold dough to make a stromboli. Cut slits on top.
- Mix topping ingredients in bowl and microwave for 20-30 seconds, until the butter is melted. Brush on top of dough.
- Bake for 20-30 minutes.
- Enjoy with a beer and watch the game :)
