Energy Bites!
Everyone needs more energy! These energy bites with some coffee are the perfect combo to help me get through a morning lecture or an afternoon slump. Plus, it is a healthier option than a processed bar, chips, cookie(s) or whatever else we reach for when we are tired.
Cocoa & Nut Butter Energy Bites
Ingredients
- 1 cup pitted dates (I used medjool)
- 1 cup chopped walnuts
- 1/2 cup cocoa powder
- 2 tbsp nut butter of your choice
- 1 tbsp chia seeds
- 2 tbsp cocoa powder, 1 tsp sea salt for coating
Directions
- Add all ingredients to blender and pulse until all of it clumps together.
- Use a tablespoon or small spoon to scoop out and roll into balls. I made 10 with this recipe
- Roll balls in cocoa and sea salt mix.
- Store in refrigerator.
