Gluten Free and Diary Free Broccoli Cheese Stromboli
Being gluten free and diary free is really hard. I do not recommend it for everyone. And, now in days many gluten free products are very processed and aren't really healthy for you either. I always say making things from scratch is the healthiest way to go. But, if you have celiac disease, crohn's, personal beliefs, or you just feel amazingly better with no gluten or dairy, then it is worth it. One day, I will share more about my journey with crohn's disease and switching to a low gluten and dairy free diet. But, I know a few friends that really want this recipe, so I will just get right to it then.
Gluten Free and Diary Free Broccoli Cheese Stromboli
Ingredients for Crust
*makes 2 Stromboli
- Bob's Red Mill Gluten Free Pizza Crust (the dough was good, but a little dry... which makes total sense because there is no gluten. Next time I want to try, Simple Mills Naturally Gluten-Free Almond Flour Mix)
- 1 packet of yeast (came in the pizza mix)
- 1 egg or Flaxseed egg substitute (2 tbsp of flaxseed with 6 tbsp of water)
- 2 tbsp of olive oil
Ingredients for Broccoli Cheese Gooey Inside :)
*makes 1 Stromboli inside

- 2 cups of chopped broccoli
- 2 cloves of garlic minced
- 1 tbsp of olive oil
- 3 slices of GoVeggie Mozzarella Singles
- 3 roasted red peppers* optional (I just wanted to finish our Sam's club jar and it did add some color :))
- salt and pepper to taste
Crust Topping
*makes 1 Stromboli topping

- 1 clove of garlic minced
- 2 tbsp of parsley chopped
- 1 1/2 tsp of butter
- 1 tsp of olive oil
Directions
- Combine 1 1/2 cup warm water with yeast packet. Wait for mix to bubble a little.
- Add oil and egg or egg substitute to mix.
- Add flour little by little and mix as you go until it like dough.
- Cut dough in half and store in warm place covered for 20 minutes to let rise.
- While rising, heat pan to high and add 1 tsp of olive oil. Add garlic and saute. When garlic is golden, add broccoli and saute until it is soft on the inside and a little crispy on the outside. Finish with a little salt and pepper to taste
- When 20 minutes are up, pre-heat oven to 425 degrees F
- Roll dough out to make a pizza crust.
- Fill the middle, leaving the edges to fold over to make a stromboli, with the cooked broccoli. Add the roasted red peppers. Next, layer on the slices of the Goveggie cheese.
- Fold the dough to make any Stromboli shape you would like. Cut openings in the top to let steam escape.
- Next mix crust topping in bowl and microwave for 20-30 seconds until butter is melted.
- Brush onto the top of the Stromboli.
- Bake for 20 minutes or until the top is golden brown.
