Roasted Red Pepper Pesto

Here is a twist on pesto.  I love roasted red peppers.  They are sweet, smoky, and add brightness to any meal.  I bought this huge jar of roasted red peppers from Sam's club two weeks ago.  So far, I have shared a stuffed chicken with red pepper recipe.  I also made a warm kale salad with them that I will share later on.  But, this pesto is my favorite way to use roasted red peppers!

Red Pepper Pesto

Ingredients 
  • 3 roasted red pepper
  • 1 tbsp of toasted almonds (you can use pine nuts too)
  • 1/2 cup of basil
  • 1 clove of garlic
  • 2 tbsp parmesan cheese (I used go veggie for me)
  • 1 tsp red pepper flakes
  • 2 tsp olive oil
  • Salt and pepper to taste
Directions

  1. Throw all ingredients into blender except olive oil.
  2. Pulse and add olive oil until pesto consistency
  3. If you do not use it all you can keep in an airtight jar for about 1 week.
