Roasted String Bean Side with Walnuts and Bread Crumbs
Breadcrumbs are the go to ingredient in an Italian household. Breadcrumbs on chicken, eggplant, asparagus, dandelion (yes, we eat dandelion haha), and the list goes on. Thank goodness there are gluten free breadcrumbs! This warm string bean side is sooooo easy and it is fancy for company too.
Roasted String Bean Side with Breadcrumbs and Toasted Walnuts
Ingredients- 2 lbs of string beans (bought in bulk at Sam's club,of course) the ends were already trimmed
- 4 tbsp of olive oil
- 2 cloves of garlic minced
- 3/4 cups of panko gluten free crumbs
- 1/2 cup walnuts
- salt and pepper to taste
Directions
- Pre-heat oven to 425 degree F.
- In sauce pan, heat 2 tbsp olive oil. Add garlic, bread crumbs and walnuts. Saute until lightly toasted.
- In a bowl, mix string beans with rest of the oil, salt and pepper until string beans are equally coated.
- Lay string beans in a single layer on baking sheet.
- Sprinkle saute mix over top of string beans.
- Bake in 425 degree F oven for 8-10 minutes until tender with a little crispness on the outside.
