Warm Kale Salad with Walnuts and Roasted Red Peppers
Still working my way through a huge jar of roasted red peppers I bought from sam's club a few weeks ago. I also have a huge bag of kale (yes, also from sam's club ha). So, I thought a warm kale and roasted red pepper salad would be perfect on this cold day.
I looked in my refrigerator for onions and garlic... the start of any good dish. Next, what do I want to do for protein? I could do beans but sometimes the roughage from the kale is enough to hurt my intestines and adding fiber-full beans may just make it worse. Then, I remembered I had opened a bag of chopped walnuts for my string beans and energy bites. I love toasted walnuts!
And, that is how this salad recipe was born. Enjoy!
Warm Kale Salad with Walnuts and Roasted Red Peppers
Ingredients
- 3 cups of kale de-stemmed
- 1 cup of roasted red peppers diced (I think I cut up 5 peppers)
- 1 clove of garlic minced
- 1/4 cup of onion roughly cut
- 1 tbsp of olive oil
- 1/2 cup chopped walnuts
- salt and pepper to taste
Directions
- Roast walnuts in the oven on 350 degrees F for 8-10 minutes and shake the pan every 3-4 minutes to make sure they roast evenly
- In saute pan heat oil and onions, garlic and red peppers.
- When onions are caramelized and translucent add kale and cover the pan for 5-8 minutes until kale is dark green and soft.
- Take pan off heat and add walnuts, salt and pepper to taste. And, then you're done! Enjoy.
