Wild Rice and Mushroom Side Dish

This rice recipe is so easy!  I made it for my cousin's engagement dinner celebration and it was a hit.


Wild Rice and Mushroom Side Dish

Ingredients
* 5+ servings 

  • 2 cups of Lundberg Family Farms Wild Rice Blend (From Sam's club)
  • 3 beef bouillon cubes
  • 4 cups of water
  • 16 oz of sliced mushrooms
  • 1 large white onion
  • 1 tbsp of butter or vegan substitute like earth balance
  • Pepper (no salt since bouillon cubes are already salty)
  • chopped parsley for garnish 
Directions
  1. Add bullion cubes to 3 cups of water in a pot and heat until bullion cubes are dissolved.  You can use beef stock instead.    
  2. I used an Instant Pot, but a rice cooker works too.  Add your rice and bullion cube water mix.  I set my instant pot to 18 minutes.  Make sure if you use a rice cooker, choose brown rice.  
  3. Dice your onion. 
  4. Add butter to a pan.  Add onions and mushrooms.
  5. When mushrooms and onions caramelized, take the pan off the heat.
  6. When rice is done cooking, mix in mushrooms and onions.  
  7. Add parsley for garnish.
  8. Done... I told you, this recipe is super simple.  
If you want to make a meal out of it, like I did with the leftovers.  You can add cubed squash, dried cranberries and chopped walnuts :)
