Cast Iron Skillet Lime & Scallion Chicken


After our ski trip and staying in the cute AirB&B, I was inspired to use our cast iron skillets.  Yes, my stove top becomes a mess after... but it is worth it.  Every time Mike and I use these skillets the food just turns out better! 

Last week were supposed to make hot and sour soup but because of our weekend trip we decided not to.  When I looked in our fridge, I saw the scallions we bought going bad.  So, I decided to make scallion, soy sauce and lime chicken... yum!

Cast Iron Skillet Lime & Scallion Chicken 

Ingredients
*makes 8 servings
  • 8-10 boneless, skinless chicken thighs (honestly, if you want to indulge a little get the chicken with skin.  It gets so deliciously crispy with the cast iron skillet.)
  • 1 tbsp sesame oil
  • 1 bunch of scallions diced
  • 1 head of garlic diced
  • 2 tbsp lime juice
  • 2 tbsp low sodium soy sauce (make sure it is gluten free if you need to)
  • 1 cup of low sodium chicken stock
  • 1 lime
Directions
  1. Heat oil on medium in skillet.  I had to use two cast iron skillets because I had too much chicken. 
  2. Brown chicken on both sides.  If you r chicken has skin, lay the skin side down first. 
  3. Add scallions and garlic and let brown.
  4. Add lime juice, soy sauce and chicken stock.
  5. Continue to cook on medium heat, partially covered until chicken is tender and juice becomes thick.  About 15 minutes.
  6. Cut lime and add additional diced scallions on top and enjoy!
I made baked diced potatoes and garlic broccoli for side dishes.
