Cherry & Pomegranate Energy Bites


I made these energy bites last week to help me through my last two weeks of medical school.  Which I still cannot believe, but am excited about!  It was also valentine's week, so I thought that rolling them in pomegranate powder would be the perfect touch.  Plus, pomegranates are full of antioxidants.

Cherry & Pomegranate Energy Bites 

Ingredients
* makes 10
  • 10 medjool dates, pitted
    I also used the powder in my smoothies... delicious! 
  • 1/2 cup dried cherries
  • 1 tsp pure vanilla extract
  • 3/4 cups old fashioned oats
  • 2 tsp chia seeds
  • 4 tsp of pomegranate 
Directions
  1. Place all ingredients in blender except pomegranate powder.  Pulse until sticky and combined.
  2. Roll into ping pong size balls.
  3. Roll balls in pomegranate.
  4. Refrigerate up to one week.
