Vegan Lemon Poppy Seed Bread

I am a mix of emotions. 

Impatient to start work and help patients. I am on vacation for our wedding.
Upset, about moving our wedding.
Bummed, my vacation week for the wedding will be spent inside.
Yet, lucky, I am not on the front lines right now because I am an immune compromised doctor.
But, scared, I will be infected with limited protection.
Terrified, I or a close family member will become a patient who will need a ventilator.
Beyond terrified, I or a loved one will not beat the infection.
Blessed, I have the support of family and friends.
Happy, I have Mike and my cute puppy.
Strong, because I know we all have each others backs.
Determined, to live each day to the fullest and save as many lives as I can. 

And, the emotions keep coming. Who else feels like this? I think it is normal. But, I know dwelling on these "scaries" will not help me, others or the situation. .

So, instead I am using this time to get life things done... had to get a new car (we were in a bad accident two weeks ago), refinance, rest, reschedule our wedding, get some home workouts in and bake (FINALLY). Here is a yummy vegan poppy seed bread I hope you like. Something to keep you busy while #stayhome.


INGREDIENTS 

  

 Dry ingredients:

  • 2 cups white flour  
  • 3/4 cup white sugar
  • 3 tablespoons poppy seeds
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  Wet ingredients:

  • 1 cup no sugar added almond milk (oat milk works great too)
  • 2 tablespoons ground flaxseed
  • 1/2 cup avocado oil
  • 1/2 cup no sugar added applesauce
  • 1/3 cup lemon juice (~3 lemons)
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
DIRECTIONS
  1. Preheat oven to 350 F.
  2. Mix wet ingredients.
  3. Add in dry ingredients.
  4. Grease loaf pan. Pour in mix.
  5. For toppings…. I put oranges on top but the bread under the oranges did not cook as well and was mushy. So, I recommend garnishing after baked.
  6. Bake for 45-50 minutes until edges a little brown. 
  7. Enjoy during quarantine.
