Double Chocolate Applesauce Bread... for Kevin

My good friend and roommate from second year of medical school LOVES chocolate.  He is also a HUGE Patriots fan.  So, when he came over this week, I thought he deserved this double chocolate applesauce bread.  I did add a TON of chocolate and nutella, so I tried to make up for that by using applesauce instead of butter.  I do still add a little coconut oil to keep the bread moist.  It is all about a balance and BTN (better than nothing).

Double Chocolate Applesauce Bread

Ingredients
  • 1 cup unsweetened applesauce 
  • 1/2 cup coconut oil 
  • 2/3 cup of sugar 
  • 2 eggs 
  • 1 tsp of vanilla 
  • 1 and 1/3 cup of flour 
  • 1 tsp baking soda 
  • 1 tsp cinnamon 
  • 1/3 cup cocoa powder 
  • 2/3 cup chocolate chips nutella for swirl (about 4-5 tbsp) 

Directions
  1. Pre heat oven to 350. 
  2. Mix wet ingredients. 
  3. Add dry ingredients. 
  4. Line loaf pan with oil spray or coconut oil and pour in batter. Add spoonfuls of nutella and swirl with a knife. 
  5. Bake for 1 hour and 5-10 minutes until no batter is seen on a toothpick or knife at center of bread. :) 
  6. Enjoy!!
