Lemon Cranberry No Bake Energy Bites
What says spring like lemon?! These lemon cranberry bites are perfect for a quick boost before your spring run, going to the gym or getting back to studying for any second year medical students with boards studying at its height (good luck!!).
Here's this quick, energy boosting, spring time recipe.
Lemon & Cranberry Energy Bites
* Makes 6
Ingredients
- 8-9 pitted medjool dates
- 1/2 cup of old fashioned oats
- 1 and 1/2 tbsp of dried cranberries
- 1 tsp of pomegranate powder
- 2 tbsp of cashew butter
- 2 tsp of chia seeds
- 1/2 tsp of cinnamon
- 1/2 tsp of vanilla
- 2 lemon wedges squeezed for juice (no pits ;))
- pinch of sea salt
Directions
Mix all ingredients in blender and roll into bite size balls. Put in fridge and let set for a 20-30 minutes. Store in airtight container in fridge for a week (but they won't last that long :))
