Fat Head Pizzas




My boyfriend showed me this recipe and really wanted to try it.  I am not going to lie, I was skeptical, but I said sure go ahead.  So, after going on our usual weekend grocery shopping, I started cooking foods for the week and Mike started on the pizza for that day's dinner. 

He made his dough following the exact Fat Head recipe here.  And, for mine, we just switched up some ingredients so that it would be dairy free.  Even though I was skeptical, it turned out amazing!  It was crunchy, savory, and delicious.  Mike was so happy!

Fat Head Pizza

Ingredients for Regular Recipe
*Makes 3 servings of pizza dough

·         1 ½ cups grated mozzarella cheese 
·         2 tbsp cream cheese 
·         1 large egg
·         ½ tsp salt
·         ¾ cup + 1 tbsp almond flour
·         Extra virgin olive 

Ingredients for Dairy Free Option
*Makes 3 servings of pizza dough

·         1 ½ cups grated GoVeggie mozzarella cheese 
·         2 tbsp GoVeggie cream cheese 
·         1 large egg
·         ½ tsp salt
·         ¾ cup + 1 tbsp almond flour
·         Extra virgin olive 

Directions (lots of pictures below showing the process)

1. Place the grated mozzarella cheese into a bowl with the cream cheese and microwave on high for 1 minute.  Mix together and then microwave on high for another 30 seconds and mix again. 
2. Add egg and mix well.
3. Add salt and almond flour and mix again until well incorporated.
4. Roll out with rolling pin between tow pieces of parchment paper.
