Healthy PB & Oat Cookies
I made these cookies the other day for a couple I tutor when they drove Mike and me to the airport. One loves peanut butter and the other loves oatmeal cookies. They are also in the midst of studying for boards, so they are trying to eat healthy to keep their minds sharp. No postprandial sugar slump. These cookies are perfect and so healthy... they have no butter, added sugar, or gluten! They are perfect for a study break snack, breakfast, post workout, or a healthy dessert.
Healthy PB & Oat Cookies
Ingredients
* makes 2 dozen
- 1/2 cup peanut butter
- 3 tbsp maple syrup or honey
- 1 tsp vanilla
- 1 large egg
- 1 1/4 cups old fashioned oatmeal
- 2 tsp of cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tbsp of chocolate chips
Directions
- Preheat oven to 350 F
- Cream PB, egg, vanilla, and honey.
- Mix oatmeal, baking soda, salt, and cinnamon.
- Add dry ingredient mixture to wet ingredients and mix well.
- Add chocolate chips and mix until equally incorporated.
- Line cooking sheet with parchment paper and use a spoon to portion out about 10-12 cookies.
- Cook for 8-10 minutes or until golden brown.
