One Pan Maple Mustard Chicken and Vegetables
One pan dishes are so easy and can be healthy too. I have done this dinner so so many times with different meats, vegetables- it really is versatile. Really, do not be afraid to switch things up in the kitchen and try new things!
One Dish Maple Mustard Chicken, Potatoes and Chickpeas
Ingredients- 5-6 Forester Farmer's Market Organic Boneless Skinless Chicken Thighs (I got these from Sam's club, but you can use whatever chicken you like)
- 1 bag of Frozen Steamed Broccoli Florets
- 4 red potatoes pealed and diced
- 16 oz can of chickpeas
- 3 cloves of garlic minced
- 2 tbsp olive oil
- 1 tbsp of dried rosemary
- salt and pepper
Maple Mustard Sauce
- 2 Tbsp dijon mustard
- 1/4 cup whole grain, coarse mustard
- 2 Tbsp yellow mustard
- 1/4 cup of maple syrup
- 1/3 cup of Parsley chopped
- Preheat oven to 400 degrees F
- In a big bowel mix diced potatoes, frozen broccoli, chickpeas with olive oil, rosemary, salt and pepper. Mix until items are fully coated with oil.
- Lay mix on olive oil sprayed pan.
- In a small bowel mix ingredients for Maple Mustard Sauce
- Lay chicken pieces in middle of pan and spoon sauce on top.
- Any extra sauce drizzle onto rest of pan.
- Bake for 30-40 minutes.
I also made roasted carrots and cornbread as sides to make this meal last a little longer through the week :)
