Oven Roasted Broccoli
Oven roasted veggies in general are delicious. They keep their nutrients, texture and are wayyyyyy tastier than boiled or just steamed. They also are quick... 30 minutes. And, when I am in a rush sometimes I steam the vegetables in microwave first for a few minutes and then roast them. Or, I will change the oven to broil to crisp them faster. As you can see, I am not always patient. But, also many of us do not have a lot of time to cook, so this is how I compromise to cook my meals faster.
Oven Roasted Broccoli
Ingredients- 2 crowns of broccoli cut into bite size crowns
- 1 tbsp olive oil or olive oil spray
- seasoning of your choice
- 1 tbsp of minced garlic
- chipotle chili powder
- panco bread crumbs
- Parmesan cheese
- Old bay seasoning (One of Mike's favs)
- AND THE LIST GOES ON... be creative. Try whatever you you like and let me know how it turns out
Directions
- Preheat oven to 400 degrees F
- Line cookie sheet with foil and spray with olive oil.
- In bowl, mix broccoli crowns with olive oil and seasonings or if you do not want to dirty another bowl like me, lay broccoli on pan and spray with olive oil and sprinkle on seasoning.
- Bake for 30 minutes until golden brown and fork tender. If you are in a rush, put oven on broil after 20 minutes to brown the broccoli quickly. But, make sure you watch it... you don't want it burn :)
