Roasted Thyme Carrots
Carrots are hands down my favorite vegetable. In the summer I can just eat them raw. But, in the winter I LOVE them roasted. They keep their texture so much better than other veggies.
Here is my super quick roasted carrot recipe.
Roasted Thyme Carrots
- 8 thin carrots washed and tops cut off
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon dried thyme
Directions
- Preheat the oven to 425 degrees.
- Line a baking sheet with aluminum foil and spray with olive oil.
- Lay carrots on tray
- Sprinkle 2 tbsp of olive oil, salt, pepper, thyme and shake carrots around until evenly coated.
- Bake for 20-25 minutes until carrots soft with caramelized outside.
- Enjoy!
