Roasted Thyme Carrots

Carrots are hands down my favorite vegetable.  In the summer I can just eat them raw.  But, in the winter I LOVE them roasted.  They keep their texture so much better than other veggies.  
Here is my super quick roasted carrot recipe. 

Roasted Thyme Carrots

Ingredients
  • 8 thin carrots washed and tops cut off
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried thyme
Directions
    1. Preheat the oven to 425 degrees. 
    2. Line a baking sheet with aluminum foil and spray with olive oil.
    3. Lay carrots on tray
    4. Sprinkle 2 tbsp of olive oil, salt, pepper, thyme and shake carrots around until evenly coated.
    5. Bake for 20-25 minutes until carrots soft with caramelized outside.  
    6. Enjoy!
