Banana, Kale & Berry Morning Cookies


Who says you can't eat cookies for breakfast!  These are delicious and healthy.  They are full of fiber, healthy fats, and antioxidants.  The perfect combination to give you the boost you need to start your day. 

Banana, Kale & Berry Morning Cookies


Ingredients
* makes about 16 cookies
  • 2 cups old fashioned oatmeal
  • 2 ripe bananas
  • 1/2 cup of almond butter
  • 1 tbsp of maple syrup or honey
  • 1 egg
  • 1/2 tsp of sea salt 
  • 1/2 tsp of vanilla
  • 1/2 tsp of baking soda
  • 3/4 cup of kale & berry frozen mix (we use fresh-o-start frozen mix. link here)
Directions
  1. Preheat oven to 350 F
  2. Mash bananas and mix in almond butter, egg, and vanilla.
  3. Mix oatmeal, baking soda, and sea salt.
  4. Mix dry and wet ingredients together.  
  5. Then add in kale and berry mix.
  6. Line baking sheet with parchment paper and droop spoonfuls to make about 16 cookies. 
  7. Bake about 15 minutes. 
  8. Enjoy with coffee :)
