Black Bean, Squash & Spice Mini Burgers


I made these veggie burgers when I made the turkey burgers.  I always like trying a new veggie options.  These burgers fall apart a little, but they are tasty!

Black Bean, Squash & Spice Mini Burgers

Ingredients
* makes 8-9 mini burgers
  • 1/2 can of 15 oz can black beans drained1 cup baked squash
  • 1/3 cup finely chopped fresh parsley or cilantro
  • 3 tablespoons ground flax
  • 1/3 cup warm water
  • 1/2 tbsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp turmeric
  • 1/4 tsp coriander
  • 1/8 tsp of ginger
  • 1/2 cup rolled oats
  • 1/2 cup gluten free panko breadcrumbs
  • 1/2 to 3/4 teaspoon fine sea salt, to taste
  • Freshly ground black pepper, to taste
Directions
  1. Turn on Foreman Grill or you can bake them in the oven at 375 degrees F for about 15-20 minutes.
  2. Mix spices and drained black beans.
  3. Use a fork to smash some of the black beans into the side of the bowl.
  4. Add squash, oatmeal, bread crumbs and mix until all incorporated.
  5. Make 2 inch round balls of mixture.
  6. Spray grill or pan lined with foil with olive oil spray.
  7. Grill each side for about 3 minutes until golden brown.
  8. Use crispy potato slices as bread (peeled, sliced, sprinkled with olive oil, salt and pepper and baked on 350 for about 25-30 minutes until golden brown) or any bread you would like.  
  9. Add dairy free cheese, avocado or anything you like and enjoy!!
