Black Bean, Squash & Spice Mini Burgers
Ingredients
* makes 8-9 mini burgers
- 1/2 can of 15 oz can black beans drained1 cup baked squash
- 1/3 cup finely chopped fresh parsley or cilantro
- 3 tablespoons ground flax
- 1/3 cup warm water
- 1/2 tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp turmeric
- 1/4 tsp coriander
- 1/8 tsp of ginger
- 1/2 cup rolled oats
- 1/2 cup gluten free panko breadcrumbs
- 1/2 to 3/4 teaspoon fine sea salt, to taste
- Freshly ground black pepper, to taste
Directions
- Turn on Foreman Grill or you can bake them in the oven at 375 degrees F for about 15-20 minutes.
- Mix spices and drained black beans.
- Use a fork to smash some of the black beans into the side of the bowl.
- Add squash, oatmeal, bread crumbs and mix until all incorporated.
- Make 2 inch round balls of mixture.
- Spray grill or pan lined with foil with olive oil spray.
- Grill each side for about 3 minutes until golden brown.
- Use crispy potato slices as bread (peeled, sliced, sprinkled with olive oil, salt and pepper and baked on 350 for about 25-30 minutes until golden brown) or any bread you would like.
- Add dairy free cheese, avocado or anything you like and enjoy!!
