Chickpea Cookie Dough... Don't knock til you try it!

I love eating raw cookie dough.  As a kid my mom would buy cookie dough ice cream and I would eat all the cookie dough out of it.  It got to the point that she labeled my gallon of ice cream because my family would get annoyed when there was no cookie dough pieces left.  Or the time my mom bought a huge toll house cookie dough tub for the freezer.  Yup, this girl ate the whole thing in a week... I even left most of the chocolate chips lol!  My mom was not happy and did not buy it again.  Looking back, thank goodness I swam a lot... because I ate a lot haha.

So, I still love cookie dough, but between the gluten and the raw eggs, it is not a good idea with my crohn's disease.  Recently, I have been seeing on fb and instagram chocolate hummus.  Which got me thinking about making myself a cookie dough version.  I looked up recipes and found one I liked from Joyful, Healthy Eats with a side of sweet blog.  Recipe here.  And, of course modified it a little.  I also tried freezing it like real cookie dough, but that did not work.  It became has hard as a rock.  So, keep it in the fridge for storage.

And, honestly, it does not taste exactly like cookie dough.  But, it is tasty in its own way.  Remember life is short and you should still indulge with some super buttery delicious cookie dough once and awhile.  But, in between this healthy chickpea cookie dough should do just the trick :)


Chickpea Cookie Dough

Ingredients
  • 1 can of chickpeas or garbanzo beans, drained and rinsed
  • 1/2 cup almond butter
  • 2 tablespoon PBfit
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt 
  • 2 and 1/2 tablespoons of honey
  • 2 teaspoons vanilla extract
  • 1/3 cup of dairy free chocolate chips 
Directions
  1. Blend chickpeas and almond butter in blender until smooth.
  2. Add PBfit, honey, salt, cinnamon, and vanilla and blend until all incorporated.
  3. Fold chocolate chips in.
  4. Refrigerate and enjoy!
