Healthier Box Brownie Recipe
Life is all about balance. We cannot be our perfect healthy selves every day! But, I have learned there are ALWAYS little things you can do to make your life healthier. Like, bring a piece of fruit with you for a snack later in the day. Use the time stuck in traffic to center yourself and think of all the positives in your life. Walking after your Saturday brunch. Spin class with the girls instead of happy hour. Or, make these healthier box brownies!
These brownies were sooo moist, dense, tasty and you would never know they are a little healthier. They also stayed amazingly in a tupperware. You know how brownies usually get crunchy after your store them.... Nope not these. Here is a picture of one brownie (left) five days later. Just as soft, moist, and delicious as the first day. And, did I mention they took 5 minutes to make and 45 minutes to bake. So they are a little healthy and quick to make!

Healthier Box Brownie Recipe
Ingredients
*makes ~16 brownies
- Ghirardelli Double Chocolate Brownie Mix, link here or any box brownie mix
- 3 scoops of chocolate protein powder
- 1/2 cup coconut oil
- 2 tbsp of vegetable oil
- 1 ripe banana mashed
- 1 egg
- 1/4 cup water
- oil spray to coat pan
- Preheat oven to 325 degrees F
- Spray baking pan with oil spray or can coat with butter.
- Mix brownie box mix with protein powder.
- In separate bowl mash banana. Then add egg, coconut and vegetable oil and mix until well incorporated.
- Add banana, egg, oil mixture to brownie box and protein powder and stir until fully mixed.
- Pour into pan and spread until even layer.
- Baking depends on pan. These I took right from the Ghirardelli box and they worked great. For an 8
inch x 8 inch (metal) pan size, bake time 39-43 minutes. For an 8 inch x 8 inch
(glass) pan size, bake time 43-48 minutes. For an 9 inch x 9 inch (metal) pan
size, bake time 39-43 minutes.
- Store in air tight container for up to a week and they stay moist and delicious!
Next time I want to try to use avocados!
