Banana & Berry Gluten Free Bread

I make banana bread pretty often for my friends.  And, although it is healthier than a lot of desserts, it is not gluten free or completely plant based.  So, I wanted to try to substitute my banana bread ingredients for gluten free and animal protein free options.  So, this recipe is a Whole-Food Plant Based approved recipe!  And.... it turned out really good :).  Dense, but moist.  Flavorful and naturally sweet, but not too sweet.  Hope you enjoy it!!

Banana & Berry Gluten Free Bread

Ingredients
  • 2 ripe bananas mashed
  • 1 tsp vanilla
  • 2 flax seed eggs (2 tbsp flax seed and 5 tbsp water)
  • 3/4 cup almond yogurt
  • 1/3 cup almond milk
  • 1/3 orange squeezed (about 1 tbsp)
  • 1 cup cassava flour
  • 1/2 cup arrowroot flour
  • 1 tsp baking soda
  • pinch of sea salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg 
  • pinch of cloves
  • 1/2 cup frozen berries for topping
Directions
  1. Preheat oven to 350 degrees F.
  2. Make flax egg and let sit while you mash your bananas and add wet ingredients; yogurt, milk, vanilla and orange juice.  Add flax egg and mix well.
  3. Add dry ingredients; cassava flour, arrowroot flour, baking soda, spices and a pinch of salt.
  4. Line loaf pan with parchment paper and pour batter into it.
  5. Sprinkle the top with the frozen berries.
  6. Bake for 1 hour and 10 minutes.  It will be soft and sticky right out of the oven... delicious!
  7. Store in refrigerator for up to week.  I only ate 1/2 of this bread over the week (mainly because we had an Indian wedding two days that week, so I got my intake of delicious food and sweets).  So, I cut my bread into bites sizes and frozen them.  I ate these bites as a snack or as breakfast with some fruit and they were delicious!!
