I have been loving my first month of being a senior resident! Probably because I had two weeks of elective in gastroenterology, outpatient office, full weekends and vacation lol.
I had my bachelorette party, bought my car, studied for my in-service exam (I am kind of a nerd lol) and worked on some recipes :).
Here is my vegan banana bread!
Ingredients
*makes a loaf of bread for about 8 people
- 4 super ripe bananas (I freeze mine as they brown and right before they go bad and then microwave them for 2-3 minutes before baking)
- 1/3 cup vanilla almond milk
- 2 tablespoons ground flax seed
- 1/3 cup melted coconut oil or avocado oil
- 2 tablespoons honey
- 2 tablespoons stevia or 1/3 cup white granulated sugar
- 2 teaspoons vanilla extract
- 1 and 1/2 cup of white flour or light spelt flour (or 1 cup regular flour and 3/4 cup quick oats)
- 1/2 - 3/4 cup of chopped walnuts or pecans
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup vegan chocolate chips or a vegan nutella or any nut butter to swirl on the top
Directions
- Mash bananas and turn oven on to 350 degrees F.
- Add all wet ingredients of coconut oil, sugar, stevia, vanilla, flaxseed, almond milk, and honey and mix well.
- Add in dry ingredients, flour, baking soda and baking powder, salt, nuts, and cinnamon and mix until all ingredients are incorporated.
- Use coconut oil or oil spray to line loaf pan.
- Spoon in batter and top with chocolate chips or a vegan nutella.
- Bake for 45-55 minutes. Until golden. And I ALWAYS use the knife trick... take knife and spear the bread at its deepest point, if no batter is on the knife it's done!
