Cauliflower Pizza Crust


My amazing tutees came over the night for a cooking class ;).  We had a lot of fun cooking and playing with Shadow, a dog they are doggy sitting.  I love cooking, but I love playing with cute little dogs even more!

Before Baking
Anyways, we were able to pull ourselves away from the cute dog to make a delicious cauliflower crust pizza and healthy PB, oat and cranberry cookies.  I will post this recipe when I get back from Europe!  I am also trying to encourage everyone to make one change a day from animal based protein to plant based protein.  My amazing tutees not only decided to substitute one egg for a flax seed egg in the pizza crust, but for the cookies they decided only flax seed egg substitutes!!

Okay, and now the recipe!

Cauliflower Pizza Crust 

After baking for 20 minutes 
Ingredients:
  • 2 cups of cauliflower rice (about small to medium cauliflower head)
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon dried oregano 
  • 1/2 teaspoon kosher salt 
  • 1/4 teaspoon garlic powder 
  • 2 eggs (we substituted this with 1 egg and 1 flax seed egg (1 tbsp of ground flax seed and 2.5 tbsp of water and let sit for about 3 minutes) *I am trying to encourage everyone to try to switch one food or recipe ingredient to animal based protein J
  • Also, the crust came out a little soft, so I would add ½ cup of almond flour to make it more durable. 
  • Cheese and toppings of your choice! 

Directions:
  1. Preheat oven to 400 degrees.
  2. Microwave cauliflower rice for about 6-8 minutes, until translucent color.  
  3. Then put in thin cloth and drain as much water as you can out (let cauliflower cool a little before you do this… your hands will thank you haha).  
  4. Mix all ingredients and press into crust on a pan lined with parchment paper.  
  5. Cook without toppings for 20 minutes.  
  6. Add toppings and cook for another 10-15 minutes.  Then, ENJOY!
