Easy Gluten Free Naan

If you don't succeed try again!  I have been trying to perfect this gluten free naan recipe for a while now.  One, tasted too much like pancakes.  Another, was too flat.  Well, yesterday I tried a recipe with yeast and found out my yeast went bad and made my naan super dense and taste so sour and gross :(.  But, I was determined and tried my original simple recipe again.  This time, though, I switched up the types of flour and it turned out great!

We are going grocery shopping tomorrow, so we will get new yeast and I will try the recipe with yeast again.  I still think it can be a little less dense and more airy.  But, until then enjoy this super easy recipe!

Easy Gluten Free Naan

Ingredients
*makes 5
  • 1 cup cassava flour
  • ¼ cup arrowroot flour
  • 1 cup of collagen powder
  • 1 tsp baking soda
  • 1/2 cup plain coconut yogurt
  • 1 cup warm water
  • 1 pinch sea salt
  • 1/2 tsp black pepper
  • So grateful my mom gave us her old mixer!
    We are loving it! 
  • 1 Tbsp chopped fresh parsley or chives (optional)
Directions
  1. Add flours, baking soda, salt pepper together in a bowl and mix well.  
  2. Add yogurt and olive oil.  If using a mixer, use the dough hook and mix on slow.  If by hand mix until equally incorporated.
  3. Add water slowly until mixture sticks to itself and becomes dough.
  4. Cut dough into 5 pieces and roll into ball.
  5. I made two using my hands to press the dough flat.  The other two I rolled between to pieces of parchment paper with a rolling pin.
  6. Heat a pan with olive oil spray or coconut oil.  Cook on medium heat about 2-3 minutes each side depending on how thick the pita is. 
  7. Enjoy with butter, dairy free cream cheese or hummus!
