Easy Gluten Free & Vegan Tortilla


I usually like crunchy things-  chips, carrots, toasted anything, but there is something I LOVE about soft tortillas too!  This recipe is so quick, easy and versatile.  Just make sure to use a non-stick pan... I have made that mistake before and they just char, stick to the pan, and set off the fire alarm haha.

Easy Gluten Free Tortilla 

Ingredients

  • 1 cup of chickpea flour
  • 1/2 cup tapioca flour
  • 1 1/2 cup almond milk
  • 2 tablespoons nutritional yeast
  • pinch of sea salt
  • add whatever seasonings you want -> I have added garam masala, rosemary, siracha, and mroe

Directions

  • mix all together with whisk until smooth and a little thinner than pancake batter
  • use a small to medium non stick saute pan and spray pan with olive oil
  • pour batter until is a little less than the size of the pan.  Use a spoon to flatten out the batter.
  • cook for 2-3 minutes on each side
  • enjoy!
