Peach Muffins
Ingredients
- 1 cup almond milk.
- 2 eggs
- 2 tbsp ground flax seed.
- ½ cup avocado oil.
- 2 teaspoons vanilla extract.
- 2 cups whole wheat flour or gluten free flour
- ⅔ cup maple syrup.
- 1 teaspoon baking soda.
- ½ teaspoon salt.
- ½ -1 teaspoon cinnamon.
- 2 ripe peaches & diced small.
Directions
Mix: 1 cup almond milk. 2 eggs. 2 tbsp ground flax seed. ½ cup avocado oil. 2 teaspoons vanilla extract.
Add:2 cups whole wheat flour. ⅔ cup maple syrup. 1 teaspoon baking soda. ½ teaspoon salt. ½ -1 teaspoon cinnamon.
Pour batter into greased muffin pan (I used coconut oil with a paper towel). Top muffins with 2 ripe peaches & diced small.
Bake at 350 degree F for 22 minutes and enjoy!!
