Peach Muffins




I made Peach Muffins for national peach day, August 22. To be honest, they were a little too healthy and needed a little more sweetness. But, here’s the recipe and I added in where I think we need to add some maple syrup to make it taste better. I will say a little almond butter and granola on top totally made up for the lack of sweetness though! 


Ingredients


  • 1 cup almond milk.
  • 2 eggs 
  • 2 tbsp ground flax seed.
  • ½ cup avocado oil. 
  • 2 teaspoons vanilla extract.
  • 2 cups whole wheat flour or gluten free flour

  • ⅔ cup maple syrup. 
  • 1 teaspoon baking soda.
  • ½ teaspoon salt. 
  • ½ -1 teaspoon cinnamon.
  • 2 ripe peaches & diced small.

Directions

Mix: 1 cup almond milk. 2 eggs. 2 tbsp ground flax seed. ½ cup avocado oil. 2 teaspoons vanilla extract.

Add:2 cups whole wheat flour. ⅔ cup maple syrup. 1 teaspoon baking soda. ½ teaspoon salt. ½ -1 teaspoon cinnamon.

Pour batter into greased muffin pan (I used coconut oil with a paper towel). Top muffins with 2 ripe peaches & diced small.

Bake at 350 degree F for 22 minutes and enjoy!!
