Vegan Banana Pancakes
Today is so cold and rainy. I love fall, but the weather changed so fast! Anyways, with the dreary weather I was in the mood for pancakes when I got home from my night shift!!! If you ask anyone I am not usually a breakfast fan, but every once and awhile, I get a craving for pancakes! And this recipe is super easy and healthy.
Vegan Banana Pancakes
*serves 2
- 2 ripe bananas
- 1 flax seed egg (1 tbsp ground flaxseed and 2 tbsp water)
- 1 cup sugar free almond milk
- 1 tbsp of honey
- 1 cup of gluten free flour
- 1 tsp cinnamon
- 1 tbsp tru nut peanut butter powder (link here)
Directions
- mix wet ingredients
- mix dry ingredients
- Spray skillet or pan with olive oil spray and turn on to medium heat
- pour onto skillet (we finally used ours!!!!) or pan
- cook on each side for 3-4 minutes
- we topped ours with 88 acres pumpkin seed putter and granola because it is fall!! (I won this pumpkin seed butter from my friend, Laura, a dietitian, instagramer (@thesassydietitian) and coswimmer at Cornell (GoBigRed!!). Anyways, it is delicious!!
