Very Berry Bread

I was trying to think of a cool name for this bread.... I tried really hard and very berry bread is all I came up with 🤣. Anyways, I thought I might as well make this summer berry bread before it is fall and I use pumpkin for everything.  Yup, I love love pumpkin and fall and cinnamon and apples!! Anyways, this recipe was soo quick and easy and turned out great for the end of summer! .

Very Berry Bread


Ingredients 

* Serves 8-10

Wet ingredients

1 cup unsweetened applesauce 
1 cup almond yogurt
1/3 cup avocado oil or coconut oil
2 eggs
2 tbsp ground flax seed
2 tsp vanilla extract
1/2 cup stevia 
Mix well. Then add dry ingredients.

Dry ingredients 

1 and 1/2 cup flour (gluten free, spelt or wholegrain)
1 tsp baking soda 
1 tsp salt
1 tsp cinnamon 
1 cup frozen mixed berries (I used blue berries, raspberries and blackberries) and a handful (or two handfuls for me with my tiny hands ) for toppings oh and I drizzled honey on top 👌🏼👌🏼 .


Directions

Mix well and fold in wet ingredients. Stir together until well incorporated. Spray bread pan with oil and pour batter in. Sprinkle top with berries. Bake at 350 for 55-60 minutes until golden brown and center is cooked. I usually take a knife and pierce the middle and of no batter is on the knife it’s done. Let cool, drizzle honey, and enjoy!!!
