Peach Bread
Gluten free. Dairy free. Butter free. Sweetened with stevia
I felt like I needed to break out of my banana bread rut. So, I looked up a peach bread recipe and found @averiesunshinepeach and mango recipe. Hers was great but I can’t eat dairy and I wanted to change a few things. For me, baking is like an experiment. I know the consistency I want and the taste I’m aiming for, so I keep adding things until I think it’s right. I’m not going to lie... sometimes it doesn’t work lol đ. But, sometimes it is spot on like for this recipe!!!!! So here’s the recipe. Hope you enjoy it!
INGREDIENTS
- 2 cups gluten free flour *I used Mama’s Almond Blend and it was the best gluten free flour I have used so far!
- 1 tbsp baking soda
- 1 tsp cinnamon
- A pinch of salt
- 2 peaches pealed and diced
- 1/3 cup stevia
- 2 eggs
- 1/2 cup avocado oil
- 1 cup almond yogurt
- 1/2 cup unsweetened applesauce
- 1 peach sliced for the top
DIRECTIONS
Mix wet ingredients and diced peaches. Add dry ingredients. Mix until well combined. Oil bread bread and pour batter in. Layer sliced peaches on top. Bake on 350 F for 55 minutes or until inside cooked (spear with a knife and if no batter is on the knife it’s done ☺️). Then enjoy!!
