Vegan & Coconut Oil Chocolate Chip Cookies

I finally had some time to bake again.  Lately, I feel like I am back in medical school with the constant worry that I need to study more.  Mike calls me a "dooms day studier," because I always worry I am going to FAIL lol.  So, after not doing my best on my inservice exam and having boards in a month I started studying every free moment... which as an intern is not a lot lol. I even stayed home tonight instead of heading to my parents for the holiday to get a little more studying in.

Anyways, last week I was in crazy study mode.  But, thank goodness for Mike.  He was like you cannot study this much.  You have to enjoy the time outside of the hospital.  He knows I love learning, but the stress I put on myself isn't healthy! SO, now I am trying to balance more.  So, one day last week, I took a study break and made these yummy healthier vegan cookies!  Hope you enjoy the recipe!

And, I am going to push through studying tonight (this post was my study break ;)) so that tomorrow and the next day I can enjoy my family and live in the moment, instead of worrying about an exam.

Merry Christmas everyone!
