Vegan & Coconut Oil Chocolate Chip Cookies
Anyways, last week I was in crazy study mode. But, thank goodness for Mike. He was like you cannot study this much. You have to enjoy the time outside of the hospital. He knows I love learning, but the stress I put on myself isn't healthy! SO, now I am trying to balance more. So, one day last week, I took a study break and made these yummy healthier vegan cookies! Hope you enjoy the recipe!
And, I am going to push through studying tonight (this post was my study break ;)) so that tomorrow and the next day I can enjoy my family and live in the moment, instead of worrying about an exam.

Ingredients
*makes 12-16 cookies
- 1/2 cup solid coconut oil on the scant side
- 1 and 1/2 tablespoons ground flax seeds mixed with 4 1/2 tablespoons water let sit for 5 mins until smooth and creamy
- 1/2 cup brown sugar
- 1/4 cup sugar or ½ of that in stevia
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoon vanilla extract
- 1 1/4 cups spelt or gluten free flour
- 1 cup vegan chocolate chips and chunks
Directions
- Mix flaxseed egg and let it sit for a few minutes.
- Mix coconut oil, sugar, flaxseed egg, and vanilla until one consistency.
- Add in flour, baking powder and soda, cinnamon and salt. Once all mixed well, fold in chocolate chips.
- Spoon onto lined baking sheet (parchment paper or cookie rubber mats work great). Bake on 350 degrees for 10-12 minutes until golden brown.
- Let cool and enjoy!
