Jackfruit TACOS coming right up
I had these for the first time at my neighbors' holiday party and I was IMPRESSED! Honestly, it has been so much fun sharing vegan recipes together!! Vegan fo-turkey from Trader Joe's at Friends-giving to hopefully a vegan scone baking session this weekend. I also had a pulled pork "jackfruit" sandwich at Copper Mountain in Colorado, where Mike and I got engaged <3, that was delicious. So, when I saw cans of jackfruit at Trader Joe's I was like "YESSSS, I WANT TO TRY THIS". I looked up a few recipes but then I just winged it. It's really just BBQ sauce and jackfruit. SUPER SIMPLE. Oh, and all the toppings of course :).
Ingredients
*makes 4-5 tacos
- 1 can of jack fruit
- BBQ sauce of your choosing (we used Sweet Baby Ray's Honey Chipotle BBQ sauce and I did not measure how much I used haha but probably 1/4-1/3 a cup total )
- diced onions
- garlic powder
- salt and pepper to taste
- corn tortillas
- toppings!!!
Directions
- Rinse and drain jack fruit.
- Pull apart jack fruit (I honestly did this after I sauted it, but I think the sauce gets into it better if you pull it apart first)
- Dice onions (I used a quarter of a white onion).
- Saute onions and while they are caramelizing (and smelling great) mix the pulled apart jackfruit, garlic powder, onions, salt and pepper.
- Then add mixture to pan and saute for about 5 minutes until jackfruit has cooked down and has some char on them.
- Make your tacos! We used corn tortillas, lettuce, peppers, guacamole and red onions.
