Cauliflower "fried rice"

I’m all about quick meals. This one I totally forgot about until Mike and I were craving Chinese food the other day. Honestly, it isn’t a full recipe... just throwing things together.

Just saute garlic, onions, and carrots in sesame oil (or any oil you have) until the onions are clear and the carrots are soft.  About 5 minutes. Then add cooked quinoa, frozen peas, and cauliflower rice with soy sauce. The quinoa I cooked in my instant pot with 1 cup quinoa to 1 and 1/2 cups water or stock for 15 minutes. As for the cauliflower rice, I buy it at Costco and microwave it according to the directions. Mix it all together. Make a hole in the middle, add eggs and scramble until cooked (I like doing this so I know all the egg is cooked 🤣). Mix it again and cook for another couple minutes. Then I taste test and see if it needs more soy sauce. Serve with sesame seeds on topped. I would have liked some chives too but didn’t have any. That’s it. 20-25 minutes max, so you can back to studying, research, or watching game of thrones like I am doing now haha.
